Sparkling honey, nose tingling, just ripe pear – when you cut it and it’s just a tiny bit crunchy but it’s ripe and juicy – that. Floral, delicate and rose petals on the nose; the smell of the start of summer after a little bit of rain as the sun comes up. Balance, bright fruit, textural and medium bodied; a lingering finish leaving you feeling fresh and alive.
This wine is a little more floral, delicate and youthful compared to it's "Fûts de Chêne" sister, but still carries similar fruit characters.
Handpicked on 17 March 2024, the whole bunches were pressed to stainless for ferment. The ferment lasted just over 3 weeks. Post ferment the wine was racked off lees, with fortnightly bâtonnage to improve texture and give weight to the wine. No malolactive fermentation, this wine was not filtered or fined at bottling in mid-December 2024.
