In 2022, I was fortunate enough to secure some fruit from Glenhope Estate, a 91-acre vineyard in the northern pocket of the Macedon Ranges. The vineyard was originally planted in 1995/96 and sits at an elevation of approximately 500m and on granite soil.
Handpicked Cabernet Sauvignon fruit, the whole bunches were delicately pressed, with the pressings kept aside. Fermented to dryness in stainless steel, then transferred to old French barriques for 6 months to develop soft floral aromas and texture. Malolactive ferment occurred in Spring, which added a soft rounded mouthfeel. The palate is crisp and savoury, subtle strawberries lingering, with rhubarb and citrus on the finish. A lovely balance between fruit and spice.
