The grapes are from the “Wanted Man” vineyard, in Central Heathcote, and 2025 is the first time I have worked with the fruit from this site.
The vines were planted in 1996, and sit on an elevated, north facing slope on ancient Cambrian soil. Hand-picked on 20 February 2025, a small parcel (12%) was destemmed and fermented on skins for 3 weeks; the remainder was whole bunch pressed and fermented in French barriques and Amphora. Post ferment, the wine was aged in Amphora (40%) and old French oak barriques. The wine went through full malolactic fermentation to soften the acid and produce a rounded mouth feel. Bottled in November 2025 with no filtering or fining.
