The first blossoms of Spring, Snowdrops and Peonies. Aromatic and perfumed, with soft lime curd and Meyer lemon. Textural and soft sweetness on first sip, then jasmine blossom and jasmine tea. Flinty minerality, balanced acidity and delicate. Fermented to dry, but some fruit sweetness lingers on the palate.
Handpicked on 25 March 2022, the whole bunches were delicately pressed into stainless steel for ferment, using only wild yeasts from the vineyard. The ferment lasted 15 days and was fermented to dry. Racked into one 600L beeswax lined Artenova (Italian) Terracotta Amphora and seasoned French barriques, the wine was aged for 9 months. Bottled in early December 2021, the wine was not filtered or fined. Minimal sulphur additions.
